Danielle Fonseca started working and managing the farm Fazenda Da Serra, with her father, in 2016. However, in 2018 her parents moved to another city and her sister moved to Canada leaving her to take over the management of the farm alone. Since then, she has been working tirelessly implementing sustainable practices and improving post-harvesting methods to show what is most special about Fazenda da Serra's coffee. Traceability is also super important for all lots produced within Fazenda da Serra.
This lot is a selectively hand-picked lot of all the best coffee cherries. The cherries then undergo a process called anaerobic fermentation which is a process of placing the coffee cherries in tanks and sealing them off from oxygen. This process allows the sugars within the coffee to break down which results in a much sweeter coffee as well as lots of funky fruity notes. After fermentation the coffee is spread at to dry in thin layers on African drying beds. These beds allow lots of airflow across the coffee beans to promote even drying across the whole lot.
The result of all this a super uniform and sweet tasting coffee that fits perfectly within our bright coffee category. The tasting notes of this coffee remind us of chocolate orange and is a coffee that will please everyone.
