Step One: Find Your Flavour Category
At Eclipse we organize our coffees into three flavour-driven categories know as Bright, Balanced, and Bold. Each one describes how the coffee actually behaves in the cup, not just the roast level. That's the fastest way to narrow down which coffee is right for you.

Step Two: Single Origin or Blend?
Once you know your flavour category, the next decision is whether you want a single origin coffee or a blend. These are genuinely different products with different strengths. The right answer depends only on what you're looking for.
Single Origin
A single origin coffee comes from one specific farm, region, or washing station. The flavour reflects everything about that place, including the altitude, the soil, the processing method, the variety of the plant. No two single origin coffees taste the same, and they change as growing seasons rotate.
Single origins are best for people who are curious about where their coffee comes from and want to taste the difference that origin makes. Our Gahahe Burundi is a good example. The Burundi is a naturally processed coffee from Kayanza Province with notes of orange, dried apple and raisin that you simply won't find in a blend.
We normally have these coffee's on a pour-over brewing method, and they rotate regularly based on growing seasons. One thing to note, is that when they're gone, they're gone.

Blends
A blend combines beans from multiple origins, roasted to achieve a specific, consistent flavour profile. The goal is reliability and consistency, aka a coffee that tastes the same every time, regardless of season.
Our Vintage Blend is the coffee we use for every espresso-based drink in the café. It's built for milk — rich, chocolatey, and consistent. How can we possibly achieve our dreams of becoming Canmore's favourite coffee shop if we're anything but reliable?
Blends are also a great entry point if you're new to specialty coffee and want something that feels familiar before exploring single origins.

Step Three: Whole Bean or Ground?
Always opt for whole bean, if you can. Full transparency, coffee starts losing flavour within minutes of being ground. Buying whole bean and grinding your coffee fresh before brewing might help you recover the flavour you've been missing.
If you don't have a grinder yet, pre-ground is fine as a starting point. Just make sure you're storing it in an airtight container away from light and heat, and using it within a few weeks of the roast date.

Step Four: What About Decaf?
Decaf has a reputation it definitely doesn't deserve. What many people don't realize is that the issue has never been decaf coffee itself. Flavour is often lost in the decaffeination process, which historically used chemicals that took almost everything out of the bean, alongside the caffeine.
Our decaf uses the Swiss Water® Process, which is a chemical-free method that removes 99.9% of caffeine while preserving the flavour compounds that make specialty coffee still taste like exactly that...coffee.
If you're sensitive to caffeine, expecting a baby, or just want a great afternoon cup without the extra buzz, our Swiss Water Process Decaf is worth trying. It's also a great option for espresso after dinner. Keep the ritual without the 2am ceiling-staring.

Step Five: What Are Green Coffee Beans?
Green coffee beans are unroasted beans, so you get the raw ingredient before any heat is applied. At Eclipse, we sell a small selection of green beans for home roasters who want to roast their own coffee from scratch.
Home roasting is fun because it gives you complete control over the flavour profile, and it's a genuinely interesting hobby if you're curious about the roasting process itself. That said, be prepared for a learning curve. If you're new to coffee, we'd recommend starting with our roasted range and working your way up to green beans over time.

Check the roast date.Every bag will have one, and you'll want to let the coffee rest for at least a week after roasting before brewing for best results. Especially for espresso.
